If any one cocktail has dominated house parties and nightclubs alike in recent years, it has to be the mojito. Refreshing, sweet and tangy all at the same time, this drink is great for those hot summer days when you want to add a touch of the tropics to your evenings with friends on your deck. There are lots of variations out there, but here’s the classic version.


• Ice cubes

• Some slices of lime

• A dozen fresh mint leaves

• 2 tbsp white sugar

• 2 ounces soda

• 1 ½ ounces white rum


1. Crush the mint leaves and 3-4 lime slices in a highball glass (tall, narrow cylindrical glass).

2. Add the sugar, white rum, soda and ice.

3. Stir well.
